Cauca Valley, found between Tatama and “Serrania de los Paraguas”, is one of Colombia’s most biologically/environmentally focused regions. With World Heritage national parks and sites where producers can farm coffee, it’s wildlife and natural water sources provide a unique and perfect climate for producing.

Ethyl Acetate is an organic compound naturally occurring in different fruits and vegetables. Sugarcane, being plentiful in Colombia, is used in particular to decaffeinate green coffee. By fermenting sugarcane, ethyl acetate is created to saturate the beans after steaming. This allows the caffeine molecules to swell and bind with the compound- which can then be removed.

This coffee is so smooth, you wouldn’t know it’s decaf. Upfront you will taste rich, dark sugar with a sweet nuttiness on the finish.
