When we created Noble Coyote Coffee Roasters in 2011, Kevin and Marta had a clear vision for the name and concept—but the logo design was proving problematic. After several design attempts that didn’t quite feel right, inspiration finally struck close to home. Their newly adopted German Shepherd/Husky mix, Zephyr, had a striking profile that made the perfect stand-in for a coyote. Today, sweet Zephyr is memorialized on every bag and piece of merchandise we produce.

For NCCR’s 15th birthday, we introduced a special edition Birthday Cake Blend, combining a rich, robust washed single origin with a bright, fruity, zingy natural process coffee. Those same qualities—robust, bright, zingy—perfectly captured Zephyr’s spirit. We loved the coffee so much that retiring it wasn’t an option, and it only felt right to honor her again by giving the blend a permanent name: Zephyr Espresso.

This coffee is creamy and sweet like a custard dessert with lingering notes of bright berries - reminiscent of panna cotta with strawberries.
