“Reko” means challenge in Afaan Oromo, and that defines the approach the Reko washing station has taken toward this coffee. Every step is meticulously planned and executed. Training for suppliers begins before the harvest season to ensure that everybody is familiar with the quality standards. Coffee cherries are then separated by the region they come from and the time of the harvest (early, mid, and late). Cherries are fermented for 36-48 hours, de-mucilaged, and dried on raised beds for 10-12 days.

When we tasted this coffee, it struck us as a very traditional Yirgacheffe. Look for notes of black tea and bergamot. We get a very full body that complements a key lime acidity. Pair with sweet pastries.
